Q. Talk about the importance of food safety.
LB: Regulations will make it necessary for certain markets to employ blast chillers. We've taken our Master-Chill™ line, enhanced it to meet expanded HACCP food safety standards and added new models.

Q. How have the blast chillers been enhanced?
LB: We enhanced the electronic controls making them even easier to use. We offer a low profile version for under combi ovens. It's a space-saver. These units can bring prepared food temperatures down in the required amount of time so bacteria and pathogen growth are not an issue. The new models have safety thaw and proofing capabilities. Larger roll-in and pass-thru type blast chillers can serve as stand-alone units or integrate in a walk-in to save space.

Q. What are the benefits to the new blast chiller controls?
LB: The controls are easier to use and have programmable features. Operators can use existing programs for various foods or create custom programs, such as defrost cycles, to fit an operation's needs.

Q. Does Master-Bilt offer innovations that are food safety-oriented?

LB: Our walk-in doors have fully-adjustable hinge backing plates. To readjust the door, operators loosen the hinges, shim the door to level it, then tighten the bolts. Plus, the hinges have a 3/8 of an inch adjustability in any direction. Because hinges move in all directions, squaring is possible without door or frame removal.
